I always thought that Jupiter was just gaseous?

Yes, and...?

Mostly gasous but possibly with a solid core, but that is deep down.

Whatever the impactor was, it brought up gasses from layers below the immediate surface, exactly the same as if it had hit in one of earth's oceans. Whatever it was probably never made it near the actual core, where pressures are crazy (most massive object in the solar system with the exception of Sol)...
