I've got an Apple Xserve that had two 1TB drives in it marked as a single 1TB RAID1 array.
I was running out of space so I swapped out the drives for 2TB drives.
Unfortunately the RAID volume isn't seeing the extra space. The RAID Set does show the extra space, the individual drives show the correct size.... what am I doing wrong?

IIRC, you have to delete the array and rebuild it.. one can't simply just shut down, swap for larger disks and bring it back up with a new size.

Wouldn't deleting it then also delete the share points?

I can speak generally as I have experience with Linux and Windows RAID
arrays more than Mac.
I can strongly suggest that you do a FULL backup before rebuilding your array.
I'm not sure about your share points.
Assume you'll have to set them up again, worst case scenario.

First, my experience is with Windows and not Apple, but I would expect if you check your drive manager you will find the 1TB raid1 drive along with either another 1TB raid1 that is unformatted, or 2 non-raid 1TB drives that are unformatted.
The full size of both drives is there, half of each drive being used for the existing 1TB Raid1 drive, the other half of each drive sitting there unformatted waiting for you to tell the computer how to handle the new space.
I do second the "make a backup" recommendation before you start messing around with that unformatted space though.
