As a native Texan, I can understand how someone outside of Texas might be confused by the Texas Constitution's reference to a Supreme Being. The Supreme Being referred to is, of course, Tom Landry, head coach of the Dallas Cowboys. Houstonians, for whom the name of Landry is like unto dust in their mouths, could substitute Bum Philips during certain Oilers seasons. The provision remains in the constitution despite Landry's retirement due in part to political inertia and in part due to the number of Cowboys' fans who are waiting for Landry's second coming.

I'm more of a Laura Swisher fan, myself. Of course, there is something to be said for Cat Schwartz, also.
But Adam Sandler and Martin Short are NOT supreme -- at least, in my mind.

I was last in Houston in 1981. And the names Philips and Landry were around THEN!*
Are these guys immortals or reincarnations or what?
*(I freely admit I couldn't tell a tight end from a loose woman. Though I seem to recall Houston had those too..)

I didn't read the commentary, but I knew immediately where that phrase came from.
It reminds of the Italian constitution, which states something like, "All people enjoy the freedom of religion, but Catholicism is the official religion of Italy."
