"This is my body this is my blood, take this in memory of me" according to church liturgy and is said to be invented by its founder Jesus Christ. But this was really grounded in far more gruesome witchdoctor rituals who had taken those words far more literally. They would sacrifice there own children in the practice similar to today's African "muti killings", with muti they drink their blood and share it around, because of the elleged healing forces.

This bizarre and revolting ritual was first watered down the sacrifice of lambs, which is also mentioned the church liturgy("behold lamb of God who taketh away the sins of the world"), then that was abolished altogether to the doctrine of "real presence" the belief they have actually transubstanted the bread and wine into the body of Jesus Christ. The tradition was refusing to let go of its cannibalism past.

How would a Xtian feel if he travelled back in time to scene Christ's' Last Supper and Christ was sacrificing his own baby. And said "this is my own flesh and blood, eat his body and drink his blood in memory of me"?

My favourite hymn contained this stanza :
And now, O Father, mindful of the love
that bought us once for all, on Calvary's tree,
and having with us him that pleads above,
we here present, we here spread forth to thee,
that only offering perfect in thine eyes,

Do you have any idea about the nature of cannibalism? Do you think that people performed cannibalism because they were hungry or because they were bloodthirsty murderers?

Usually neither, unless your plane crashed in the Andies or something. It was usually due to either religious superstition or primitive medicine, like muti practitioners believed the flesh of a sacrificed child was the most powerful medicine.
Not many would fit into the blood thirsty murderers category like Jeffrey Dahmer.
Cannibalistic rituals existed in Nigeria and South Africa and as far as New Guinea and Australia, so it was very widespread and the Eucharist was more than just metaphorical at one time

Christians often speak of their god sacrificing his only son to save them. That would be the mindset of early Xtians felt it was quite acceptable people to sacrifice their sons in the name of religious superstitions of the day.

Cannibalism involves eating other members of your own species. We could, for the sake of the current discussion, restrict that to the human species. The details may vary from case to case, but that is the nature of human cannibalism: people eating people.

Cannibalism in many cases and in many civilizations is a religious practice indeed that intended to bring human in contact with the deity throught the victim that supposed to embody some of the identities of the deity at the time of the sacrifice but it wasn't the only way. That means that cannibalism wasn't the only way to commit theophagia.
In fact omophagia was the most common way and we find extended references to omophagia in the Bible , cannibalism is a rather marginal practice that describes a specific ritual that might have things in common with omophagia but it describes specifically a different practice.
So, the accurate way to refer to Eucharist in terms of social anthropology is theophagia and not cannibalism.
